CHILLED MINTED CUCUMBER HONEYDEW SOUP
Serves: 4
- 1 English cucumber
- 2 Cups honeydew pieces ( from about 1/4 medium melon)
- 8 oz plain non-fat yogurt
- 1/4 cup mint leaves
- 2 T fresh lime juice
Garnish: 4 fresh mint leaves
Combine cucumber, honeydew, yogurt, mint leaves and juice. Blend in puree mixture in batches for 30 seconds, and transfer to a large bowl. Season soup with salt and pepper.
Chill soup, covered, at least 2 hours up to 6 hours. Garnish each bowl with mint.
